Lemon Crinkle Cookies!!

Hello friends! My name is Renee and I'm addicted to all things lemon.  Kidding......but really, for some reason my passion this summer is anything lemon.  The latest recipe is Lemon Crinkle Cookie, and let me just tell you now, they melt in your mouth.  I have one of these little babies in the a.m. with my coffee and it is just like heaven!!

Lemon Crinkle Cookiesyield: 2-3 dozen
Ingredients:
½ cups Butter, Softened
1 cup Granulated Sugar
½ teaspoons Vanilla Extract
1 whole Egg
1 teaspoon Lemon Zest
1 Tablespoon Fresh Lemon Juice
¼ teaspoons Salt
¼ teaspoons Baking Powder
⅛ teaspoons Baking Soda
1-½ cup All-purpose Flour
½ cups Powdered Sugar
Directions:
Preheat oven to 350 degrees. Grease light colored baking sheets with non stick cooking spray and set aside.
In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.
Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.

Tote Bags

Hello all! Well I thought I would post just one of the items that I am making for our "craft-a-palooza" this fall. As I mentioned in our previous post a bunch of us crafty girls are getting together to have a bazaar! Yay, fun....

Anyway, I'm making memory boards and tote bags.  Keep in mind, this is my very 1st major sewing project.  The most I've ever sewed before is a straight line to fix a hem. I received my sewing machine from my MIL, which is a Viking, it's like 30 yrs old.  Sews the most amazing stitch! That is until I got it stuck in reverse! Bummer for me.  So long story short, I ended up borrowing my neighbors till I can get mine fixed! Yay, neighbor!

Anywho, back to the real reason you came to read this blog.  Pictures of my tote bags!

Bazaar time!!!!

So I guess it's that time of year when people start scrambbling to make stuff for bazaars they are going to be in.  Well no different here......except it's our very first bazaar!  F A O my Schwarz!

It's a small bazaar, just a bunch of crafty gals hanging out all day! But the best part, part of our proceeds will go to DSAMC (Down Syndrome Assoc. of Mid-Columbia) that's were we live, in the mid-columbia. Anyway, I'm getting off track.  So here is a sneak peak at what Lindsay and I will be making.

Boys Room Before and After

So about a little over a year ago we moved into our house.  I wanted to go thru room by room and redo them or slap some paint up on the walls.  I started with my older son's room first, sorry no pictures.  Life went on and my middle son, kept asking "mommy when are you going to do my room" I kept saying your's is next.......well now a year later and his finally got finished! YAY!! O, keep in mind I did not pick out the paint! Big mistake letting your 4 yr old pick out paint!

Walls were painted using Behr Ultra Premium Eggshell paint. Color is Disney Alien Green and Laser Beam.  I added the wainscotting so the green wouldn't be so......well......green!  It helped.  I painted the green stripe all the way around the room to break up the yellow a bit. I redid the dresser and you can read about it here. Added his name and some nic nac's, sports stuff and of course you can't forget his transformer curtains and blanket!  I'll add some shelves for books and stuff, but I really wanted to get this done for him since he'd been asking for awhile now.  If you all could see his face when I did the big reveal.....he was out of town with brother and daddy for the weekend.......his face was priceless!

Cake POPS!!

These cake pops are my new obsession. I had my first one at Starbucks. It was a birthday cake flavor. SOOOO GOOOOD!!!!  I wanted to try and make my own and try out a different flavor. My kids gobble them up too. I looked online for a few recipes and I used part of all of them. Here is my recipe:


I took a triple chocolate cake box and cooked it according to the directions. When the cake was cooked and cooled I crumbled up the cake by hand and added about half a container of caramel frosting.  I combined the together well and rolled into a giant ball. I put the cake mixture into the fridge to cool and harden for about an hour. After an hour I rolled with my hand small 1 inch balls and placed them on a cookie sheet covered with tin foil. I then melted my chocolate being careful not to burn it.  I then dipped the cake sticks in the frosting about an inch and placed them in the cake balls about half way through. This will act like cement to keep the stick attached. I then spooned on the melted chocolate to all the cake balls and let dry. I put the sticks into a foam wreath so they could dry. When dry they are ready to eat!  YUMMY!!!!!!! Enjoy.

The Lansing's Go To The Beach......2011

Just wanted to share some pictures from our Beach trip we took this year.  No, people pictures, just animal life, and some views!  We pretty much go to Lincoln City, Oregon every year.  We rent a beach house on the ocean and love every minute of it!  This year the weather was exceptionally wonderful!

Our view from our porch! Isn't it gorgeous! It pretty much looked like this everyday all week, except one day.  Couldn't ask for anything better!

Spent some time out on the beach, got a few sunset shots! If you haven't seen a Pacific Ocean sunset, you need to!  This is a sunset from last year, didn't get a good one from this year, but as you can see it's beautiful!

We went to the Aquarium in Newport. It was super fun and got some great shots of the sea life.

I love my Nikon D60, these shots of the sea life are thru that super think glass that makes it so hard to take good pictures, cause your always getting some sort of reflection back!  Awwww, thank you camera!  All pictures were taken without flash, and the some of the sea life were taken on night shot.

We had a fabulous time, and can't wait for our next trip back to the beach! ****Candie****

Boy's Mini Bathroom Make-over!!

Good day all!! I hope you have had a fantastic week so far, things here have been pretty mello in Eastern WA.  I still haven't finished my master bath cabinets (really it's just knobs) that I really wanted to get done before embarking on another project, but ADD has struck again.  I wanted something new for the boys' bathroom, which is shared by anyone who stays w/ us.  So when we moved into the house it was basic builder white walls. I decided right off the bat to add a splash of color w/ green apple paint, and thats how it sat for the last 7 years.  I know what a slug I am.  But I decided it needed something else, (or I needed another project,haha) so my husband and I added bead board.
  We got the big sheets of bead board at H.D. and had H.D. cut them to size, did you know they offered that service! So awesome!! Then out came the Liquid Nails & nail gun, I left that to hubs.  Then we put up the 5" top rail, filled in the nail holes, caulked (dislike that part) & painted.
Then we added the cute hooks we scored at IKEA.

This is the final product, we totally love it!!  It just seems sooo happy!
On to bigger & better things.....Demri. She is my granddaugher and is just about 8 months old & such a doll!!
